I think PoS is needed for a serious project like ETH yeah, trusting in miners is foolish, since 99% of us are in for the profits, so we’ll go wherever there’s money, and that’s not a good thing for projects that require consistensy.
On the other hand, there are people putting ether in contracts that don’t let them withdraw for some long period of time, because they think long-term the value will go up and they don’t want to risk short-term fluctuations scaring them into selling when the price drops. You suggested the usage of the GIGABYTE 1070 with the model number #GV-N1070WF2OC-8GD, however, on Amazon (at least on the German Amazon), the power usage of it is noted as 500w and I don’t really understand how six of those are supposed to work together with a PSU with 1000w. Is that information simply wrong or am I missing something?
After confirming the setup is working, then it is logical to slowly scale up by adding more graphics cards and machines steadily over time using the profits generated as proof that more is possible with more power. While I would not start off spending much without any proof I could actually set it up correctly, after confirmation that I could indeed build a mining machine that worked, I would be motivated to build more.

The Ethereum mining difficulty had been steadily increasing since July but recently dropped from a high of ~3,000T to ~1,500T. This dip was caused by the Byzantine fork but isn’t as advantageous as it seems. Even though the difficulty decreased, the block reward also decreased from 5 ETH to 3 ETH effectively canceling out any benefit from the difficulty change.
If you are planning to invest for a medium to long term, i would advice you to go with Ethereum. There are no much risks involved and you can certainly invest right now and make some profits in the long run.
I bought Nvidia Geforce GTX 1060 6GB for 300€ few months ago and now it has made me ~1000€ money in cryptocurrency ! My computer is just a basic computer only the graphics card is good ^^ And I play a lot and turn off the mining while I play, so it’s not mining 24/7. Easy money! 😉
Install your GPU Drivers like you normally would (Next, next, Ok, etc.) and reboot.  Afterward, you know your GPU’s are recognized correctly if you go into Device Manager (search in Windows search bar) and you don’t see any warning marks on your GPU’s and it shows them correctly like this:

First off from Sep 1st the January 11th there has been NO change in difficulty. Prior to Sep 1st there was a rise and now post january 11th there has been a rise. But for the majority of the known record it has actually remained level. So that is speculation.
Nvidia cards are more expensive to buy in general, but also more efficient. With electricity in Germany being the price of north American electricity, it would have been a really bad idea for me to go and even pay a premium just to get one of the few AMD cards available.
