Not sure how I’m kidding myself here, but you’re making the point for me. You don’t mine fiat, you mine cryptos to convert to USD at some point. You’re right to say that that point can be delayed into perpetuity. Over that time horizon, prices can go up, or go down, which determines how “profitable” it is to mine or not mine.
My top choice is currently the Asus B250 Mining Expert board. It’s literally made for mining, with support for up to 19 (!) GPUs and 3 power supplies right out of the box. If you would plan to run this for a longer time, you should try to lower the clock speed on the GPU core to lower power consumption and increase the memory clock speed to increase hash rate. Since Ethereum is not very dependent on the core clock and basically only the memory clock it would make performance better while also increase the profit margin
